One of my new favorite discoveries is the Tone It Up community. Two girlfriends from California created an online fitness and nutrition empire, and make amazing things happen, for example, healthy donut holes, and this version: Pumpkin Spice Donut Holes. They are just delicious doughy balls of cinnamon and spice goodness, and I needed to share them with you. The recipe is available for public consumption here.
2-3 donut holes is one serving, or one mid-morning snack (or breakfast), and it's the perfect bite to warm you up on a cool Fall day. And bonus points - they are pretty simple to make!
Note: it does help to have a cake pop mold or donut hole pan, but you can make these on just a plain tray - they may be less spherical, but will still taste delicious. I used this donut hole pan from Amazon (not a paid post!).
Here's how I made them:
1. Preheat oven, and then combine your dry ingredients - almond meal, Vanilla protein powder, baking powder, pumpkin pie spice, and salt. Mix well.
2. In a separate bowl, combine your wet ingredients - pumpkin puree, maple syrup, egg, unsweetened almond milk, coconut oil and vanilla extract - and thoroughly mix.
3. Combine wet and dry ingredients together and mix well.
4. Spray a donut hole pan with coconut spray, and then spoon batter in. Batter should be pretty thick, and so you will want to fill the donut hole mold over the top to form a sphere, such as:
5. Cook for 12-15 minutes (I went for 15) or until toothpick comes out clean. Let cool for 5 minutes.
6. Combine cinnamon and sugar together in a plastic bag, and shake to combine well. Add 2-3 donut holes at a time to plastic bag, close, and roll/shake donut holes to cover completely. Place donut holes in glass container to store, or eat a few first, I don't judge!
